2 Cups Granulated sugar
3/4 Cup water
1/2 Cup oil
3 eggs
1 Container sour cream (8 ounce)
2 1/4 Cups all-purpose flour
2/3 Cup unsweetened cocoa
1 1/2 Teaspoons baking soda
1 Teaspoon salt
1/2 Teaspoon baking powder

Also, here’s what you will need to prepare the icing for this chocolate cake dessert:

1 Teaspoon vanilla
3 Cups confectioners sugar
1 Cup coarsely chopped pecans
1/2 Cup butter or margarine
1 Cup firmly packed light brown sugar
1/3 Cup milk

Cooking Instructions:

Preheat over to 350 degrees F. Generously grease and flour a 9×13 baking pan.

Mix all of the dry ingredients in large bowl thorougly. Add water, oil and eggs and mix until combined. Beat at medium speed

Chocolate Chip Cookies Just a Mistake

The inventor - or creator - of the chocolate chip cookie was Ruth Wakefield. In 1924, Ruth Wakefield after graduating from Framingham State Normal School’s Department of Household Arts, she lectured on food and worked as a dietitian. After marrying, she and her husband bought a tourist lodge (bed and breakfast) and called it the Toll House Inn.

Sound familiar?

Well the chocolate chip cookie actually came about by sheer accident. Ruth Wakefield was responsible for, and cooked the meals of, the guests at Toll House Inn. She had a special recipe called Butter Drop Do cookies. This recipe called for crumbled baker’s chocolate - a bitter chocolate if you’ve ever taken a bite.

One day while baking away, Ruth realized she did not have any baker’s chocolate on hand, but she did have a semi-sweet chocolate bar. So she cut that up into bits and pieces and added it to her recipe. Unlike baker’s chocolate which melts down completely, the semi-sweet pieces only partially melted. Leaving those lovely bits of chocolate we all love so much. And, of course, her cookies were a big hit with her guests.

But the story doesn’t end there…

The misused chocolate bar was actually a gift from Andrew Nestle - of yes, the Nestle Chocolate Company. As Ruth’s cookies grew and grew in popularity so did the sale of Nestle’s semi-sweet chocolate bars!

It wasn’t long before Andrew Nestle and Ruth Wakefield struck a deal which was Ruth’s printed recipe on the back of every package of Toll House Chocolate Chips. In return for getting the recipe, Ruth received a lifetime’s supply of Nestle’s chocolate.

Ruth did write her own cookbook called Toll House Tried and True Recipes, in 1940.

In 1977 Ruth passed away, and on New Year’s Eve, 1984, the Toll House Inn burned to the ground. However, to this day the agreement holds and Ruth’s recipe continues on the back of each Nestl Toll House chocolate bar package. She continues to be so honored into the 21st century.

Heres how to make delicious chocolate covered strawberries. First of all ensure that the strawberries you are intending to use are dry, then allow them to be room temperature warm prior to making them. After the strawberries have been covered in chocolate, put them in your refrigerator to cool, but do not store them in the fridge. Consume within 1-2 days.

It is very important to ensure that the strawberries are dry, as a small amount of water is enough to make the batch curdle. Strawberries dipped in chocolate can also be injected with a suitable liquor after the chocolate has hardened. It is best to use a syringe to inject the strawberries with the contents.

Chocolate Covered Strawberries Recipe

Ensure all ingredients are at normal room temperature.

This recipe makes 15 chocolate covered strawberries ( approx )

Ingredients To Use:

4.5 tablespoons of cream ( heavy variety )
9 ounces of bittersweet chopped chocolate
15 strawberries
1.5 tablespoons of butter

Follow These Steps:

1.Line a baking sheet with foil or paper that is wax coated

2.Melt the butter and the chocolate in a boiler over hot water, stirring all the time until the chocolate has melted. Add cream to the mixture and stir until smooth consistency. Allow the mixture to cool

3.Pick up each strawberry by its stem and dip it into the mixture you have made. Allow any excess mixture to go back into the pan. Place the chocolate covered strawberry on the paper and repeat until you have made 15 strawberries.

Wine tastings have gained popularity in the last couple of years as a great excuse to have some friends over and have a good time. And, when your not having company over, no worries, theres more chocolate for you.

The first step is to pick your chocolates. Chose a theme and select chocolates to represent this theme, or try one of our many prearranged tasting flights. If all else fails, pick random bars. Youre more likely than not to have a very pleasant surprise. Its also fun to include a few grocery store bars in your tasting to see how they stack up against the others, but I warn you, you may never buy grocery store chocolate again!

Let the tasting begin. Start by admiring your bars. How do they look, are they smooth? Is there a high gloss? Note the color. Chocolate can range from an ivory white to deep auburn to pitch black. Inhale the aroma, the sweet lilt of milk chocolate and the slight pungency of the darker varieties.

Now its time for the good part, the taste test. It is very important that you try the chocolates in the correct order. Start with the highest cacao content to lowest, except when tasting flavored chocolates, in which case you should go from weakest to strongest flavored.

Snap off a small piece of chocolate, pause to enjoy the aroma, place it in your mouth, and let it melt. Make note of the texture. Jot down the flavors as you recognize them. Notice how the taste evolves over time. Roll the chocolate around your mouth, let it touch the taste zones on your tongue; the tip senses sweet, the sides salty and sour, and the back distinguishes bitter flavors. Reflect on your overall experience and rate the bar. Make notes on the aroma, taste, melt, length the flavor lasts, and your overall impression. Take a sip of water, eat a carrot, or nibble on a saltine cracker to clear the palate and then start over again with the next bar.

Some are added into the chocolate itself to create a new taste, or the flavors are added to the filling so that its released when the chocolate layer is broken. Some of the most recognized chocolate treats that are based around different fillings are chocolate truffles. These treats offer a plythora of fillings and flavors. From creams, to nougets, to nuts, the choices are many. Other chocolates that might contain fillings are chocolate bars. These are not without their options too. Some bars contain a liquid type filling, which is released upon biting into it. Other fillings might be solids such as creams or pastes; caramel is a popular one. Apart from a filling that might occupy a cavity in the chocolate, are ingridients that might be scattered throughout solid chocolate. One of the most well known additions is crispie pieces, or crispy rice. The Nestle Crunch bar is a good example of this. Other things might be toffee bits, or nuts of various sorts, peanuts usually being a favorite.

    Some common flavors are:

  • Mint flavoring. This is always a common and well liked flavor.

The process to refine the chocolate and retain many of these elements is costly. This is one way to detect good chocolate is based on the price.     The solution is quite simply: eat the chocolate before you get home.

    Store it inside your fridge. This will cause the calories to get cold and leave the chocolate.

    Correct me if I am wrong but balance is recommended in any diet.

    7. Won’t chocolate cause me to age faster?

    Quite the opposite. Chocolate is loaded with preservatives. Hence, you should eat more chocolate because preservatives help you look youner.

    8. Won’t eating chocolate ruin my calorie intake for the day?

    A nice box of See’s candy will provide you with your total calorie intake for one day. Hence, simply eat chocolate. What an easy way to count calories.

    9. Besides being really good, what are the benefits of eating chocolate.

    Eating chocolate is good for the economy. If no one ate chocolate several industries could go under. For example, chocolate factories, girdle factories, control top panty hose companies, weight loss clinics, gyms. Wow, the list just keeps going. Just think of all the people who would be out of a job if we all stopped eating chocolate.

    10. Why do women crave chocolate when on their monthly cycle.

    Because chocolate puts us in a good mood. Hence, encourage your wife to eat chocolate during those ’special times’. She will be much easier to get along with.

    Many different types of chocolate are available for consumption, but what is the real difference between them? Chocolates are classified by the percentage of cocoa in the mix and the other ingredients that are included. Some chocolates are only suitable for cooking, while others are made for immediate consumption. Below are the edible variations and how they are classified.

    Semi-Sweet Chocolate - Made from unsweetened chocolate (chocolate liquor), but with the addition of sugar, cocoa butter, lecithin and vanilla mixed in. Semi-sweet chocolate must contain at least 35% unsweetened chocolate, and typically is less than 50%.

    Dark Chocolate - The rules regarding classification of chocolate in this category vary throughout the world. However, the one constant is that this type of chocolate contains no milk solids, but has sweeteners and cocoa butter added to the mix. In Europe, dark chocolate must consist of at least 35% cocoa solids while in the U.S., it must have a 15% concentration of chocolate liquor.

    Milk Chocolate - Like you’d guess from the name, milk chocolate is made with condensed or powdered milk. In Europe, milk chocolate must consist of at least 25% cocoa solids, while in the US, it must have a 10% concentration of chocolate liquer and a minimum of 12% milk solids. Milk chocolate is primarily used for eating and is the most popular form of chocolate in the U.S.

    White Chocolate - The name given to white chocolate is a misnomer because it isn’t really chocolate at all. Strictly speaking, chocolate is defined as any product 100% based on cocoa solid. White chocolate doesn’t contain any cocoa solids and is made from cocoa butter, milk solids and sugar.

    Couverture Chocolate - Chocolates under this classification are true gourmet chocolates that are rich in cocoa butter (upwards of 35%) which creates an extremely high fat content. Cocoa butter is the fat extracted from chocolate liquor. These chocolates contain a very high percentage of cocoa which is the solid powder left after the cocoa butter is extracted from the chocolate liquor.

    It is common perception that chocolate is a mood elevator although some people believe that it causes headaches and migraine. Though it is widely accepted that chocolate affects our moods, the research on this is still in a fluid state Every contention is fiercely debated. We will discuss various ways that chocolate affects our moods and emotions, according to the present set of beliefs.

    Chocolate affects us both negatively and positively. Some people, when they are sad or depressed, experience a craving for chocolate. On eating chocolate they report that their mood is elevated and they feel better. This elevation in mood is temporary though and when this effect wears off, they again revert to their previous state of mind.

    There are many health benefits that are attributed to chocolates. It is good for the heart. It increases the responsiveness of blood vessels which is useful for preventing heart disease. It also increases glucose tolerance. Chocolate also contains some substances which have an anti oxidant effect. This is helpful in preventing cancer.

    Chocolate is reported to cause headache, obesity, rectal itching, heart burn and emotional problems like irritability, confusion, anger and depression.

    Chocolate is rich in carbohydrates, which increase the rate with which tryptophan enters the brain. This increases the level of serotonin, a neurotransmitter that regulates moods, creating a good feeling.

    The addictive property of chocolate is also well documented. This is evidenced by the fact that some people, when trying to give up alcohol, depend on chocolate to satisfy their cravings. This drug-like property is attributed to caffeine, anandamines, phenylethylamine and magnesium that are present in chocolate. The presence of caffeine and magnesium can contribute to a feeling of craving for chocolate. Ananadmides affect the brain in a similar way to marijuana, though research in this field is still debated.

    There are more than 350 chemicals in chocolate. Some of these are believed to cause allergic reactions. Some scientists believe that phenylethylamine and theobromine could cause changes in moods. Phenylethylamine causes blood pressure and blood sugar to rise. It generates a feeling of alertness and contentment thus creating a feeling of well being. But, a short period of emotional high is followed by a period of emotional low. Theobromine is found naturally in cocoa and acts as an anti-depressant, but has been known to be toxic to animals.

    Eating chocolate can also give rise to a feeling of anxiety. Phenylethylamine is said to cause dilation of blood vessels in brain causing headaches. Though it is still debatable whether phenylethylamine reaches the brain.

    One ounce of chocolate contains 20 mg of caffeine. Researches on the effects of caffeine have reported that caffeine can cause problems in sleep, restlessness, irritability, heartburn and anxiety. Withdrawal from caffeine causes fatigue and headaches.

    Tyramine is another amino acid present in chocolate. Though it is not certain whether any significant amount of tyramine reaches the brain, yet it is known that it causes blood vessels to expand and contract causing dull headaches.

    Women appear to crave chocolate more than men, including diabetics. Some amongst these women reported that only chocolate and nothing else could satisfy their craving. The presence of magnesium in chocolate can account for the fact that during PMS (Post Menstrual Syndrome) craving for chocolate increases in women, as during this period a deficiency of magnesium may arise.

    With all this contradictory information on the effects of chocolate on mood, one has to observe from one’s experiences and decide whether chocolate is right for one. But, certainly, large amounts of chocolate will effect us physically or emotionally one way or another.

    Whether its a party, a quiet day in the house or just cruising downtown with friends, theres always an occasion (or excuse) to gratuitously munch on chocolate.

    Everyone loves chocolates, especially the types made from those secret vintage recipes. Listed below are a few of such.

    CHOCOLATE JELLY WITH CRYSTALLIZED GREEN GAGES

    Dissolve in a quart of water three tablespoonfuls of grated chocolate and let it come to a boil. Simmer for about ten minutes. Add a cup of sugar and a box of gelatin (that has been softened in a cup of water) and strain through a jelly bag or two thicknesses of cheese-cloth. When almost cold, add a dessertspoonful of vanilla and a tablespoonful of brandy. Then whisk well, add half a pound of crystallized green gages cut into small pieces and pour into a pretty mould. When cold serve with whipped cream.

    CHOCOLATE MARBLE CAKE

    Put one ounce of chocolate and one tablespoonful of butter in a cup, and set this in a pan of boiling water. Beat to a cream half a cupful of butter and one cupful of sugar. Gradually beat in half a cupful of milk. Now add the whites of six eggs beaten to a stiff froth, one teaspoonful of vanilla, and a cupful and a half of sifted flour, in which is mixed one teaspoonful of baking powder. Put about one-third of this mixture into another bowl, and stir the melted butter and chocolate into it. Drop the white-and-brown mixture in spoonfuls into a well buttered deep cake pan, and bake in a moderate oven for about forty-five minutes; or, the cake can be baked in a sheet and iced with a chocolate or white icing.

    MRS. BEDFORD’S CHOCOLATE CRULLERS

    Cream two tablespoonfuls of butter and one-half of a cupful of sugar; gradually add the beaten yolks of three eggs and one and one-half cupfuls more of sugar, one cupful of sour milk, one teaspoonful of vanilla, two ounces of chocolate grated and melted over hot water, one-third of a teaspoonful of soda dissolved in one-half of a teaspoonful of boiling water, the whites of the eggs whipped to a stiff froth, and sufficient sifted flour to make a soft dough. Roll out, cut into oblongs; divide each into three strips, leaving the dough united at one end. Braid loosely, pinch the ends together and cook until golden-brown in smoking-hot fat.

    Just How Is Chocolate Made?

    How is made you are wondering? Chocolate is derived from a cocoa bean removed from the pod of the cocoa tree. Cocoa trees are found growing in equatorial zones in the South America region. Once the Cocoa beans have been harvested they are then placed into large shallow pans to be heated. This is also known as the fermentation process. In some regions where the climate is warm the beans may be fermented by the sun. Throughout this fermentation workers stir them often to ensure that all the cocoa beans have been equally fermented.

    One of the first things that industrial manufacturers do is dry roast the beans. The process of dry roasting helps develop the flavor into what we enjoy when eating it. The cocoa nibs, otherwise known as beans are comprised of two very important ingredients: cocoa solids and cocoa butter. The cocoa butter is basically a fat while the cocoa solids are predominantly coarse cocoa powder. The seperation of the two ingredients is very crucial in producing a smooth, high quality candy.

    The process of removing the cocoa butter from the cocoa solids is to convert the nibs into a non alcoholic liquid called liquor. Once this is done the liquor is then sent into high pressure to press and squeeze the butter from the solids. What remains is a cake of solid cocoa. After the butter is removed it is then refined for future use, such as use in the cosmetic industry. Once the cocoa solids have been extracted and ground into a coarse fine powder it is then mixed together with other ingredients to become the candy we enjoy today.

    To produce the bitter sweet dark the powder is mixed with cocoa butter and some sugar. Milk is made by mixing the powder with a minimum amount of cocoa butter, sugar and milk. White is produced by combining all the ingredients and by adding real vanilla flavoring as an emulsifier.

    Once all the ingredients are combined they are all stirred together under heat to make a molten . The mixture is then placed into larger vats where it will be conched. The conching process is done by large smooth granite rollers that keep the mixture stirred and continue to grind the powder into relatively small pieces. To make the smooth velvety texture, the mixture is conched by very small granite rollers. The conching process takes several days at a time.

    After all these steps have been completed the is then poured into molds where it is then allowed to cool and then removed and placed in a wrapper. Then the famous candy treat is ready to be dispersed to enjoy.

    Chocolate Is Good for Us? Yes! (Third in a series)

    This is my third in a series of articles on the happy health benefits of some of our favorite indulgences. Please read my related articles on coffee and tea, wine and beer.

    When the Spanish explorer Hernan Cortes came home from Mexico in the early 1500s, he brought with him the sacred of the Aztecs. Made from the roasted seeds of Theobroma cacao, the was flavored with a blend of exotic ingredients, and although Cortes had come to like this concoction, the Spanish eventually added sugar, vanilla, and cinnamon for a sweeter more pleasing to European taste. The secret recipe was eventually leaked to Europe, and first appeared in London in the mid-1600s. By 1765 the American colonists were enjoying cocoa made from West Indian beans. Cocoa powder was developed by a Dutch maker, and his patented process for pressing cocoa butter from the roasted beans made possible the production of both instant cocoa and edible .

    Theobroma means, appropriately, of the gods. Chocolate has low levels of caffeine; its main stimulant is theobromine, with a much milder effect. The darker the , the higher is the content of theobromine.

    Cacao beans are extremely rich in flavonoids, the same antioxidant compounds found in wine and beer, coffee and tea. Chocolate contains calories and fat but contributes little to the total saturated fat in the average American diet. Eating dark in favor of milk helps in avoiding much of the fat.

    Most people don’t put much effort into buying for a fondue fountain. Perhaps they have a few bags of chips on hand or they’ll even buy some of those brick sized bars. Sure this will work fine and the whole fountain concept will still impress your party guests. But true aficionados use gourmet in their fountains and you can definitely taste the difference.

    Melting regular supermarket chips is not an option in the most popular home versions of the fondue fountain. The will be too thick and if it can actually be pumped to the top of the fountain, you won’t get that cascading waterfall effect that these machines are famous for. Plain will just drip if you’re lucky. If you’re unlucky, it will clog your fountain, leaving you with a few pounds of that needs to be melted with hot water before you can use your fountain again. When using regular , you will need to add a significant amount of vegetable oil in order for the to be fluid enough for the fountain to work.

    The best way to melt supermarket is with a double boiler. For every two pounds of , you should slowly add one cup of vegetable oil while stirring. Courverture is usually used for making candies or for dipping so it’s perfect for a fountain. It’s made with a higher percentage of cocoa butter than normal and melts to a smoother texture. Couverture will give you that elegant looking waterfall effect without any additional oil or mixing required. The only drawback is that it’s very expensive when compared to supermarket .

    Melting couverture is the same as regular . Either use a double boiler or a microwave. Since you won’t be adding any additional oil or using the electric mixer, the microwave can work great. Set the microwave for a minute at a time and stir in between.

    Whoever decided that turning a fondue fountain into a home appliance should be given a medal. Why save the fountain for weddings and other large parties when you can now set it up every weekend.     Chocolate the Newest Health Food?

    There are now even more reasons for chocolate lovers to rejoice! As more amazing research news comes in about chocolate, the substance is moving from a bad-for-you candy to an important health food. Those of us who had always continued to indulge in occasional chocolate treats can stop feeling guilty and now easily justify our cravings.

    You may have already heard that chocolate contains beneficial flavonoids and antioxidents. Flavonoids are naturally-occurring compounds found in plant foods that are full of recognized health benefits. There are more than 4,000 flavonoid compounds, which are a subgroup of a large class called polyphenols. Phenols are believed to help reduce the risk of heart disease by helping prevent atherosclerosis. The flavanols in chocolate appear to help the body use nitric oxide, which is crucial for healthy blood flow and blood pressure, which means that chocolate might help reduce hypertension as well.

    Red wine is know for its high phenol content, but an average bar of dark chocolate contains more phenols than 8 ounces of red wine. Scientists at Cornell University and Seoul National University examined the cancer-fighting antioxidant content of hot cocoa, red wine, and tea, and found that cocoa had nearly double the antioxidants of red wine and four to five times more than tea.

    Holland’s National Institute of Public Health and Environment found that dark chocolate contains 53.5 mg of catechins per 100 grams. (Catechins are the powerful antioxidants that fight against cancer and help prevent heart disease). By contrast, a cup of black tea contains only about 14 mg of catechins and green tea has about 30 mg of catechins.

    A study at University of California Davis found that participants who ate chocolate showed a reduction in platelet activity. This means that chocolate has an anti-clotting, blood-thinning effect that can be compared to aspirin.

    A Harvard University study of 8,000, with an average age of 65, revealed that those who consumed chocolate lived almost a year longer than those who did not. Those who ate one to three candy bars per month had a 36 percent lower risk of death (compared to the people who ate no candy), while those who ate three or more candy bars per week had a 16 percent lower risk.

    A study of older men in The Netherlands, known for its chocolate, showed that those who ate the most chocolate, an equivalent of one-third of a chocolate bar every day, had lower blood pressure and a 50 percent lower risk of death. The researchers also noted the men eating the most cocoa products were not heavier or bigger eaters than the men who ate less cocoa.

    And it’s not just dark chocolate that is the only healthy type of chocolate. Most studies talk about the benefits of dark chocolate, but some of the most recent news about chocolate includes good news for milk chocolate lovers, who have been left out in the past.

    The Wheeling Jesuit University in West Virginia did a study that shows that milk chocolate seems to boost brainpower. The groups in the test consumed, on different occasions, milk chocolate, dark chocolate, carob and nothing. Then they were tested for cognitive performance including memory, attention span, reaction time, and problem solving.

    According to Dr. Bryan Raudenbush, Composite scores for verbal and visual memory were significantly higher for milk chocolate than the other conditions. The study also found that consumption of milk and dark chocolate was associated with improved impulse control and reaction time. It seems that by consuming chocolate you get stimulating effects from substances found in chocolate, such as theobromine and phenylethylamine, which then lead to increased mental performance.

    Chocolate really does make you feel good, too. It is known to stimulate the secretion of endorphins, producing a pleasurable sensation similar to the runner’s high a jogger feels after running several miles. Chocolate also contains a neurotransmitter, serotonin that acts as an anti-depressant. Studies in England show that even the aroma of chocolate gives a bout of euphoria and will help lift the spirits.

    And now people are looking at chocolate for skin care. According to Marlies Spinale, director of Tru Spa, Like many other antioxidants, cocoa polyphenols are thought to offer the skin protection from free-radical damage caused by sun, pollution, stress, alcohol consumption and other factors. I believe that we will hear more about the benefits of chocolate in skin care.

    Some people have been avoiding chocolate because one of the main ingredients of chocolate is cocoa butter. It was thought that it was an unhealthy fat, but actually cocoa butter is not unhealthy. It is made up of the beneficial fatty acids– oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. Stearic and palmitic acids are healthy forms of saturated fat. Plus chocolate contains vitamins A, B1, C, D, and E, as well as potassium, sodium, and iron.

    So go ahead and indulge in a little chocolate, in moderation of course. I would recommend that you try to find organic chocolate, and stick with darker chocolate because it has more chocolate flavonoids and less sugar. (Sugar weakens the immune system; so don’t consume sugar if you are ill.) And a little bit of milk chocolate is alright when you need an occasional milk chocolate brainpower boost, such as before a test. All you students take note!

    How To Successfully Mail Chocolate

    Chocolate gifts are, perhaps, the tastiest gifts that anyone could hope to receive. The problem with gifts, though, is making sure that they do not melt before they arrive at their destination!

    This is quite easy if you are hand-delivering your gifts. But if, on the other hand, you plan on mailing your them, it is a whole other story. Here are some tips to help you make sure that your gifts of do not break while being handled and to make sure that they do not turn into gifts of soup:

    If you are mailing a bar and you do not want it to break, try taping a stiff piece of cardboard to the back of it and then wrapping it in a piece of bubble wrap.

    If you plan to mail a gift during the dead of winter, it will probably stay fine and not melt. If, on the other hand, you expect your gift to arrive completely solid in California in the heat of August, you need to think again. Avoid sending during times of extreme heat.

    Instead of sending gifts full of truffles and candy bars, consider sending brownies and/or cookies (save the cookies dipped in for colder months, though). If you do decide to mail cookies, pick out ones that do not break easily, like drop cookies. Pack them in foil-lined tin or small box. Put sheets of wax paper between the layers of cookies. Cushion the tin or box of cookies within the shipping box with plastic grocery sacks (or other such material). Mark the box with perishable . Also write on the top, this side up to encourage careful handling.

    If you are sending other items along with your , place your in a zip-lock bag (and suck out all the air) to make sure that in case it does melt, nothing else is ruined.
